The Domestic Diva and The Diva of Music...

Ha, ya right! Yet somehow this weekend I have been fairly domesticated ;)
This weekend has been full of me and the kids time. As I mentioned, Ryan was golfing yesterday: he really needed the day...and had a great time with a friend. And now today, he is at the boat show with his dad. Today, I decided to stay home. I am sure the kids would have rather gotten out, but realistically, I have had a home day with getting things done. I started the day of with more baking! I made the family Blueberry Oatmeal Muffins, and made my own gluten/dairy free versions. Recipes to follow. All turned out quite well. I have learnt a few tricks for substitutions to make things g/d-free so I kind-of, made my own!
From there it has been a combination of cleaning the house and laundry. Not the most exciting Sunday...but sometimes you just got to do it!
I am going to take the evening to relax and watch the Grammy's. Speaking of...a sad turn of events with Whitney Houston having been found dead late yesterday afternoon. A sad loss to music. I remember dancing around to her songs as a young girl...how can you resist with her songs like "I Wanna Dance With Somebody" and "The Queen of the Night." Not to mention watching the movie "The Bodyguard" a zillion times...right up there in the tween era with "Dirty Dancing."
There is much to envy in stardom...and much to be glad to not be a part of as well; All of their perks and paychecks I am sure are a nice incentive...but a "normal" life out of the spotlight, I think in many ways, there is much more to envy there.
R.I.P. Whitney Houston...You really now are, The Queen of the Night.

I am looking forward to watching the Tribute the Grammys are supposedly putting together for her honor, sung by the great Jennifer Hudson.

Here are my recipes from this mornings baking:

(Regular) Blueberry Oatmeal Muffins with crumble topping



1 1/4 cup quick cooking oats
1 cup whole-wheat flour
1/3 cup sugar
1 tbsp baking powder (i generally use 1/2 the amount)
1/2 tsp salt
1cup milk
1egg
1/4 cup vegetable oil
1 cup blueberries

Combine all dry ingredients. Add wet ingredients to dry and combine until just moist. Fold in Blueberries. Fill greased tins 2/3 full with batter.

Add crumble topping. Then bake for 20-25 minutes at 425F.

Crumble Topping:
Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2tsp cinnamon. Mix with fork and sprinkle over muffins BEFORE baking.

Gluten Free/Dairy Free Blueberry Oatmeal Muffins




1 1/4cup g-free oats
1cup gluten free flour (I use Red Mills)
1/3 cup unsweetened apple sauce (if you aren't cutting out sugar than use sugar instead of applesauce)
1/2 tbsp baking powder
pinch of sea salt
1cup almond OR coconut milk
1/4cup water mixed with 1tbps milled flax seed (substitute for 1 egg)
1/4cup vegetable oil
1 cup blueberries

Combine all dry ingredients. Add wet ingredients to dry and combine until just moist. Fold in Blueberries.
Fill greased tins 2/3 full with batter. Cook 20-25 minutes at 425F.
